CoreLife Eatery has solidly cemented itself into my lunch rotation. They are located in the Hyde Park Shopping Plaza where Mellow Mushroom used to be. Started in mid-2015, this chain has quickly grown to over 50 restaurants in 11 states. They are fast-casual style with counter ordering. All ingredients are free of GMOs, trans fats, artificial colors, sweeteners, and other artificial additives.
The inside is clean and bright. Your order is prepared in front of you and can be customized as desired. There is ample seating throughout the dining space, though I normally take my order to go. You can also order online for rapid pickup.
On my first visit, I had the spicy chicken rice bowl with purple rice, roasted beets, roasted sweet potatoes, falafel, spinach, pickled red onion, spicy Sriracha sprouts, and chicken bone broth ($10.95). I enjoyed this, but I wasn’t completely sold. On my second visit, I had the spicy Thai chicken and rice noodles with Nappa cabbage, peppers, scallions, sesame sriracha sprouts, and Thai chili sauce ($8.95). This was spicy and delicious, and I have yet to try anything else on the menu.
Now every time I go back (once every couple weeks) I get the same spicy Thai chicken and rice noodles. It is highly recommended. And also from time to time, I treat myself to a honey ginger lemonade.
